Customers in Frisco, located approximately 12 miles northwest of Plano, are arriving at dawn to purchase baked goods from a local business that frequently sells out. The operation, known as Little Bit Bakery, is run by Henson, who sells items from a cart positioned on her front porch. The high demand has led to a routine where late arrivals often find the inventory depleted.
Henson began baking during the pandemic, initially creating custom cakes from her home. She transitioned to the current model last September by introducing the rolling cart. The menu rotates weekly but consistently features fresh sourdough bread, English muffins, cinnamon rolls, and oatmeal cream pies. To manage the volume of orders, Henson has purchased a dedicated bread oven, which she describes as essential for meeting current production levels.
On a typical Saturday, the bakery produces approximately 85 loaves of sourdough and nearly 100 English muffins, along with other items. The early hours are necessary for the business model. Customer Dana Eagle arrived shortly after 6 a.m. on a recent Saturday, stating that the early wake-up is justified by the quality of the products. Eagle praised the taste of the goods, noting they are worth the effort required to secure them.
The business has cultivated a dedicated group of repeat patrons. Delilah Navarette, visiting for the first time, admitted she was unaware of the early arrival time required and feared missing out. She noted that the customer base has formed a supportive community around the baker. Navarette described the regulars as acting like family, expressing a desire to support Henson’s work beyond just purchasing items.
